Mom's Cookin!



Well.....if you are fortunate enough to still have your mom COUNT YOUR BLESSINGS! We almost lost mom last year from kidney failure. It was the darkest...saddest time in my life. So let me tell you to treasure the moments...and go the extra mile while you still have her. Almost losing her reinforced, deepened, and touched the deepest part of my soul. So, I can tell you that I do treasure every moment I have with her, and I truly believe that the man upstairs kept her here a little while longer just for me..... She's feeling better these days than she has felt in a long while...and when she said that she wanted to cook a very traditional dish for the family "Menudo" well I was just ecstatic. Most of you have never tried this...and if I tell you what it is well...I'm not sure you'd be interested. I can assure you that this dish is only found in very authentic Mexican restaurants or eateries...and I invite you to be adventurous! It is, my dear friends...ok are you ready? - - made of tripe (tripe is the lining of a cow's stomach), and it is cooked for several hours on a low simmer, with rich chili spices, and hominy....it's quite delicious, but I must admit it's an acquired taste. It's a special dish, and I love it. And you know what? This time it's even more delicious than I remember because my beautiful mom cooked it with her gentle loving hands. Provecho!
