Trick or Treat? TREAT....

Boooooo! The day has finally arrived. My boys have been soooo excited about today. And we will celebrate it with our usual huge pot of chili, and spending time with some close friends and family. The boys can hardly wait to get home from school to go trick-or-treating....so everyone enjoy this spooky day and be safe. And take a look at these amazing pumpkins....ok so I didn't carve these, sorry....but aren't they just amazing?! And yes they are certainly a TREAT for the eyes! ooooo and some more Halloween pictures of Classic Charm.

Take A Stroll With Me...

One of my most favorite things to do on the weekends, is to get up early....before everyone else in the house...put on my gear...and sneak out to take a morning stroll through my neighborhood, Plum Creek it's called. And of course this time I took my camera with me to capture some of my favorite homes, and to share some of the adorable fall touches and welcoming entrances. I think you'll agree that they are so charming. It's such a treat to go for my walks...and I can't help but wonder what they look like on the inside, and what's cookin up in their kitchens...ha! I would have preferred to take front views....but I didn't want to get arrested, so this is the best I could do....!

Annie's Green Chili Enchiladas - YUM...

My sweetest cousin Annie and her twin sister Sylvia visited this summer from Southern California. One afternoon she decided she wanted to make us dinner...and she treated it us to her green chili enchiladas. It's quickly become one of my favorite dishes, and it's so easy to make. Well, since I made them for Sunday dinner, it was the perfect time to share this recipe with all of you. Provecho! They are truly scrumptuous.



heat tortillas in hot oil for 10 seconds each side (and for
a lower fat version, skip this step and warm them in the
microwave for approx. 30 seconds to make soft.



dip tortilla in green sauce, then fill it
with shredded chicken, cheese, and olives




arrange them in a baking dish



sprinkle with cheese and olives before baking



Garnish with sour cream and shredded lettuce and diced tomatoes




Annie’s Green Chili Enchiladas

1 can of green chili sauce (28 oz) any brand
1 small can of sliced black olives – (3.8 oz)
1 dozen corn tortillas
2 cups shredded cheese (Mexican blend)
3 boneless chicken breasts boiled with whole garlic clove for taste,

then shredded
Canola Oil – as needed
Salt to taste
9x13 baking dish – Heat oven to 325oF

Step 1: heat oil in a small skillet until very hot, then dip one tortilla at a time and sauté for 10 seconds each side (until the tortilla is really soft) – place tortilla on a plate and continue until you have sautéed all of the tortillas, making a pile on a plate, and adding oil as needed to pan.

Step 2: Dip each tortilla into the chili sauce so that both sides are coated, then set on a plate to assemble each enchilada.

Step 3: Put approx. ¼ cup of chili sauce to coat the bottom of the baking dish. Fill each coated tortilla with chicken, sprinkle with cheese, and a small bunch of olives, then roll and place into the baking dish.

Step 4: Once you have placed all of the rolled enchiladas into the baking dish, spoon some chili sauce over them, then sprinkle with the remaining cheese, and top with olives.

Bake for 25 minutes uncovered….and ENJOY!

Chi-Town's Beauty...

My father-in-law and his four dear sisters all flew in last week from various parts of Texas for the 50th anniversary celebration. So...yesterday we took them into the city for some sightseeing. It was such a lovely day...and the views we captured are just breathtaking. If you've never had the pleasure of coming to Chicago, you should really consider putting in on your list of "must visit" places. It leaves nothing to be desired--I promise! And if you ever come to visit....please stop in at Classic Charm. Mi Casa Es Su Casa! Stop to Smell the Roses....




Ahhhh....yesterday we attended a 50th wedding anniversary for my husband's aunt and uncle. Relatives came from near and far to celebrate the special day. The ceremony was held on Friday at 4:00 p.m. in the afternoon, and yet the church was filled to the brim... You can't help but wonder about the journey two people take to get to this point...and wonder if you yourself will be part of this elete group someday. But what stood out more than anything, was their love and dedication to each other and the respect they have for the vows they made so many years ago....truly an inspiration. And though I'm probably most guilty of this....it's a reminder to "don't sweat the small stuff."

Home Sweet Home...so long St. Louis

ooooo how I missed you my sweet bed...


Well...it was a hectic treck to the airport for my friend Karen and I because we had to catch a cab...and then we made the poor guy stop at the stadium to pick up some baseball goodies for our boys. So....we spent a good 20 minutes or so in the shop, then we were headed to the airport. Storms were on the way they said, so we were rushing to catch an earlier flight. Oh, you should see the halloween display at the Southwest Airlines counter, it was just adorable, check out the snapshots. So we did manage to catch that earlier flight, a bit bumpy, but a quick flight, and ahhh....all better now. I got back home from St. Louis last night around 6:30, and straight to pick up my boys from their CCD classes. Ooohhhh what a wonderful welcome. My angels were just screaming when they saw me and yes I got smothered with hugs and kisses....yea I'm home now. Couldn't wait to see their faces, and sleep in my own bed. And I suppose St. Louis wasn't so bad afterall. Well with Crabtree & Evelyn toiletries on my hotel bathroom counter (LaSource products, you have got to smell this stuff!) ....that just made things all better. ha! You know I had to bring them all home with me....can't wait to take my shower this morning! I decided to take a vacation day...as I need some R&R, so I'm headed to the mall with my hubby Gary in just a little while. I'm searching for something to wear to a family function tomorrow - talk about last minute... Thanks for stopping in today. Wishing you a peaceful day.
