Yummy Chorizo Quesadillas!

Today is where my blog begins. I love the Midwest because of the changing of the seasons. Can't really imagine living anyplace else.... This morning I spent a little while browsing through my magazines looking for some hearty recipes as I sipped my morning cup of coffee....in search of a recipe to share with my friends. Instead I thought that I can share a little of my Mexican heritage with all of you. So, I'll share one of our easy snacks that my kids enjoy, and I think you will too.

Chorizo Quesadillas:

1 package of flour torillas
1 can of refried beans with chorizo flavor
1 small block of muenster or brick cheese

Warm the beans in a skillet and with a spreading knife, coat one side of one tortilla with the refried beans, then layer thin slices of cheese on the beans, top with a single tortilla and cook on a hot griddle or skillet, turning every couple of minutes, until the tortilla looks slightly toasted and the cheese is melted. It should take about 2 minutes per side. Slice the quesadilla with a pizza cutter or knife. Serve on a plate with a spoonful of salsa or sour cream. Enjoy!
